Joe Guardiola lol? I think you're the first person I've seen calling him like that. I don't want to sound too pedantic here, but I believe it's Josep without the "h".

Hey! Fabian Delph basically said the same thing.

I’d say I’ve learnt more in these three weeks than I have throughout my whole career.

It is a big statement but it is the truth.
Sounds a bit like he was overly excited about Guardiola's arrival. But it might say more about Delph himself though and the quality of the managers he has trained under, although I've got nothing against Pellegrini.

Nah look that someone didn't forget anything. It's just a Catalan name and that's how they spell it.

I'd steal it (Joe G, JOEY-G), but yet again I call Guardiola just Guardiola not Pep or whatever, so unfortunately I'd have no use for it.
