This stadium will be the official West Ham ground soon i guess, when this happens, EA will do this one if West Ham still on PL till then. Not always bigger stadiums are harder than small ones but looking at some pictures of Olympic Stadium seems to be tough to do...

It was already made for FIFA 15 by willans91. It is compatible with FIFA 16, only need to edit the glare files with notepad.

Colleya Fonseca Stadium from the Costa Rican league, it is used by many teams here. I know its small and too "Third World´ish" but it could be an easy project and a proper challenge for a modeler.
