Tips Without Ball:
- Always use the SUPER CANCEL R1+R2.
95% OF THE TIME I HAVE MY HANDS ON R1 + R2 WHEN CONTROLLING A DEFENDER. If you run in the normal lines PES3 makes you, you will find it very hard to cut off defenders
-DONT PRESS TACKLE BUTTON! When defenders attack at you, just get in their line and block them. You can easily dispose them of the ball without pressing any tackle button! Press it only when your 100% sure.
did you mean attackers?(instead of defenders?)

The reason you use R1+R2 while defending is because you can freely run anywhere. If you dont use them you will feel a little restricted while trying to move around while the ball is not at your feet.

50-50 airballs you cannot do much about. It comes down to positioning and the players abilities (balance, height, strength and jumping)
The best advice i can give you is defending headers in crowded areas.
For example when the oppenent has a corner.
Press triangle to make the keeper charge out. While you do that REPEATEDLY press header and L1. This will make more then one defender attempt the header. The more people contesting the header, the harder it is to control the header.
You will get the odd unbeatable header that is fast and flat but 95% of the time doing what i said above will clear the ball or have it in keepers hands.
Not nescessarely! If you have a free header, you simply can use the X-button for a header and than you can 'pass' it to your own men without risk. I think your example is correct when using the [] or O for heading, but even than I would NEVER advice to head back! If you pass in the feet of an opponent behind you, it is even more dangerous! If you are in doubt where to pass, just pass forward, off from your goal!
Something else to watch out for.
When the opponent tries a long ball and you have to head the ball in your own half, NEVER head sideways. Always head forwards or backwards. 99% of the time your player will stupidly header it to a running oppenent.
