Um as soon as I finish a season ( I'm currently with Juventus for the 5th season) I i choose to not resign with Juventus, how come teams like Manchester United, Inter, Milan, Arsenal, and Chelsea etc aren't available...

You don't have enough prestige. You need to have enough prestige (the points you get for accomplishing things at the end of the season) to join big teams.

Yep, its the prestige my friend, gain more...or there is an unlocker somewhere out there so you can start with any team you like
