I think the ability to record and play back entire matches would be a nice addition. This could help foster the tournament community as well by being able to "rebroadcast" or just publicize big matches or simply just publish and trade matches on the Internet.
You can do that in most of the major FPS games (Quake, Half-Life, et. al.), so I would think it would be logical and perhaps even semi-trivial to do so in sports games. You can already save highlights, so just keep streaming that data to the drive for the entire match. It should be ridiculous compressable as welll, so space should be a big issue.
