Re-Signing Players in Career Mode

One of the goals set for me is to re-sign 3 players to contract extensions of at least 3 years. All 3 players rejected my offer even though I raised their salary and now I'm not allowed to make any additional offers to those 3 players.

Will I get another opportunity to make these players an offer before their contracts expire?

Is there a way to determine what the player wants in terms of years/money?

What time during the season is the best time to negotiate with your own players?

I tried signing Fabregas on a 5 yr deal but he rejected. I had to wait a few weeks and it looked as if he only wanted 2yrs. So I put his salary up a little bit and gave him a 5% bonus for every goal scored. and he accepted.

Thanks. When the players are willing to negotiate again I will make them offers they can't refuse.
