what buttons do you press to stop your player from running but still keep the ball rolling (not R1 + R2), then you can wind your guy up and shoot it etc...

no thats not it, that just stops the ball by his feet in front of goal, I remember being able to move with the ball and letting it roll in front while my player stops, having more time to kick it.. (like in real life)

Not sure what you mean entirely, but if take your finger off sprint, and just tap it without pressing any directional buttons (i used the ps2 pad for the pc), so R1, it stops the player still with the ball in front of them.

(If you hold R2, it will spin you round to face goal or sheild it i believe.)

Try L1+R1 this will make the player roll the ball a little bit infront of him so that shots would be more accurate.
