Is it possible to head back to the goalkeeper? When i try, the player just jump and almost not even touch the ball and the other teams strikers takes the ball...

Good question, but I've never tried it. I have noticed that pass button headers (as opposed to shoot button headers) don't seem to travel very far, and are ineffective unless you are facing in the direction you are trying to head the ball, so either of those factors could contribute to the effect you are seeing.
