This year you CAN head the ball,the crossing is no more scripted.
You can kick the ball outside the field with your GK,you have to fight for dead balls situations. You can do low shots also.
So you have far more control over your team. The more I play the demo the more I'm enjoying it.The only restriction I could make is that the computer always attack in the center and create a midfield battle but maybe when we can choose the tactics for the teams it will add more variety.
IMO, the big annoying bugs from 2003 are fixed and in a few monthes when this game will be patched it will become really enjoyable.
