Changing Player Hair

If I want to change hair to a player (simply copying a file from another player in HAIR folder) what I have to do?

If you just want to change a single player's hair style, I'd just use Creation Master to do it. It's quite simple. Just navigate to that player and modify it to whatever you want.

The hair styles are just stored as an integer in the players table.
