what influence does the atatck & defense arrows have in the formation settings. I put arrows forward and backward for midfielders so they go forward and then track back, is this correct. Also does a high defense arrow mean that they stay back more or tend to run round the pitch after the ball?.

Those arrow represent only what you want them to do during your attack. If he has one arrow pointing forward and one pointing back, then he will either help in attack or stay back depending on the situation. Again those arrows only affect what they do during an attack.
