Damn, so many questions...

I'll keep it short:
-Greece is in the game for the guys that asked about it...
-Edit mode is superb, except there are not that many options for hair, facial hair, and colour of those etc... but you can edit pretty much anything from nose to ears, mouth, weight, height, boots, kits etc...
-customizing the stadim is limited to choosing the type of the turf and not too sure if there is anything else you can do with it.
-Referees are NOT in the game at all, except during cut scenes when you get yellow/red card etc...
-ad-boards are pretty much the same as in the demo, mainly fifa07.com ones...
-Manager Mode: The currency is POINTS, so no real currencies. It's same as in Fifa 06 last gen... Once you enter your name, you pick your sponsor with goals for that season etc... as in previous versions.
In the main menu you have sliders such as job security, team fatigue, chemistry etc... If you change your formation or put players in the wrong position you can see straight away how it affects your team chemistry + or - from the default. It is very well balanced as hypotetically you would love to have Nesta and Vidic as your CBs as they are both brilliant defenders, but they may not work together that well hence your chemistry will go down... same for attack...
There are news as before that come in with choices whether to let your players rest or do some charity work to build the team spirit at a cost of fatigue etc... so there are some decisions to be made which can alter your performance.
Best part of manager mode are experience points which you earn through your performance on the pitch. You can improve existing players or newly created player's stats by using these Exp points. For example, you can improve Adriano's defensive stats, and they are quite cheap, but to improve his attacking stats you better be ready to fork some Exp points... You can even buy "negative" stats, e.g. which will lower Adriano's defensive stats but give you HEAPS Exp points to be used on other players etc... Very cool feature as it requires some tradeoffs to be made...
The only downside of manager mode is that it is limited to only 5 seasons, and as I said before, by the time you develop your player it's pretty much end of the manager mode... It's just not very realistic that your 18 year old player finishes his career by the age of 23... But nevertheless this is the very best offline feature of the game, really enjoyable...
There's also a lot of stats after the game, you can see pass % and it's path over the pitch, chances, goals, fouls, concentration, player growth etc... There's Man of the match with stats such as goals scored, successfull passes/dribbles (yes even dribbling stat) etc... but it looks like Man of the match is not properly balanced... I scored a hat trick with Figo last night (brilliant match btw, was down 2-0 from FKs, and managed to win 3-2, played on semi-pro) and instead of him being man of the match it was someone else with 100% pass accuracy (3 out of 3) etc... Maybe I'm missing something, but I thought that hat trick any day would win hands down...
anyways, back to work now...
For the end, Online Mode is absolutely perfect!!! There is Zero lag... you forget that you are playing it online... it is THAT good.
I played some folks from Switzerland and South Africa last night and it was perfect...
