The only time I've looked at a PES scoreboard texture I noticed the numbers were on the texture, so I guess they are taken from the texture and not from the font. If this is the case, maybe just changing the colour in the texture to white could do the trick, not sure though.

in dt06.img two file they change position of all scoreboard UCL (183-185: CL scoreboard bins) that's it:

Sorry mate, not a clue on how to hex those .bin's, they look encrypted. I haven't found anything resembling a float or a 32-bit colour.

Is there any chance to use this scoreboards only for that league. For example, I want to see Ligue 1 scoreboard just in Ligue 1 matches. When I apply, all the scoreboards changes.

If you mean my scoreboards, yes, they work with the MWM, but actually most of them (if not all) are already included with the mod as I gave Ariel permission to do all he wants to with my stuff.

Not in an automated way unfortunately. One's free to use the textures but the hex job must be done from scratch.
