Good news everybody!
I've figured out how to get more choice of zoom and height on the FIFA 15 DEMO. By changing the rangelow values of camheight and camzoom in fifa_demo_db-meta.xml you can do this.
I like high and zoomed out cameras, so I put the zoom value <0 and the height value >0. Like this I can adjust the slider from height to 0 (going lower), and zoom to 20 (going higher), because the sliders limit as normal me when I'm in the 0-20 range.
The starting values in game will always be a bit higher than the min value. Editing the db to other values in the range seems to make no difference to the starting value.
