UPDATE - 15/07/2019
I've been working hard over the weekend to get the Gold Cup, AFCON & Asian Cup working in Career mode, but it's simply failing to work. I hopefully will get help to find a way of getting these tournaments to work in Career mode in the future but for now I am going to move on.
