From what I understand, you designate your created player to a team during the creation process.

Speaking of Created players, I have the Xbox version, and unless i happen to be blind, I cant seem to change my players sock length. Its always short. Is there a way to change it?

I think the socks cant be edited in the game itself.
For pc version, maybe we can edit the socks using editors :)
