If you really thought about it, you'd have figured out one of the many ways to do this.
1) Using CM09, import the boot you want into the demo into the slot you want in Fifa 09. (eg. the default boot is #2 so to replace that, you go to brand #0 and slot 2)
2) Using File Master 09, extract the fsh file from zdata_04.big in Fifa 09 to a location you choose.
3) Using File Master 10, import the fsh file to the correct zdata (1 or 2 in the demo).
4) Rebuild the fat file with the regenerator Outsider87 posted in the forums.
You could also dump all extracted boot fsh files into the main demo folder and they would all be present ingame without the need to regenate anything. A lot of this has already been said, I know I mentioned dumping the extracted boot fsh files into the main demo folder already.
